Coconut prawn curry with jasmine rice

A fragrant weeknight curry — sweet prawns, coconut and lime spooned over a mound of rice.

Coconut prawn curry with jasmine rice

Ingredients

  • 500 g large prawns, peeled and deveined
  • 2 tbsp vegetable oil
  • 1 onion, finely sliced
  • 3 tbsp red curry paste
  • 400 ml coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • Juice of 1 lime
  • Handful of Thai basil or coriander
  • 300 g jasmine rice, cooked, to serve

Method

  1. 01

    Cook the jasmine rice according to the packet and keep warm.

  2. 02

    Heat the oil in a wide pan over medium heat and cook the onion 4-5 minutes until soft.

    Add the curry paste and cook 1-2 minutes until fragrant.

  4. 04

    Pour in the coconut milk, fish sauce and brown sugar. Simmer 8-10 minutes.

    Add the prawns and cook 3-4 minutes until just pink and cooked through.

  6. 06

    Stir in the lime juice and taste for seasoning.

  7. 07

    Scatter with Thai basil or coriander and serve over the jasmine rice.
