Thick-cut brioche soaked overnight, griddled golden, and piled high with banana and blueberries.
Whisk the eggs, buttermilk, vanilla and cinnamon together in a shallow dish.
Soak the brioche slices in the mixture for 1-2 minutes per side.
Melt butter in a large pan over medium heat and cook the soaked brioche 2-3 minutes per side until golden.
In a separate pan, melt the remaining butter with the brown sugar. Add the banana slices and cook 2 minutes per side until caramelised.
Stack the French toast, top with the caramelised banana and blueberries.
Finish with a generous drizzle of maple syrup.
