Sourdough toast with smashed avocado and eggs

The five-minute breakfast we come back to on repeat — good bread, ripe avocado, a jammy egg.

Sourdough toast with smashed avocado and eggs

Ingredients

  • 4 thick slices sourdough bread
  • 2 ripe avocados
  • 1 tbsp lemon juice
  • 1 clove garlic, grated
  • 4 large eggs
  • 1 tbsp white vinegar, for poaching
  • Chili flakes, to serve
  • Extra-virgin olive oil, to serve
  • Salt and black pepper

Method

  1. 01

    Bring a pan of water to a gentle simmer and add the vinegar.

  2. 02

    Toast the sourdough slices until golden.

  3. 03

    Mash the avocado with the lemon juice, garlic, salt and pepper.

  4. 04

    Crack each egg into a small cup, swirl the simmering water and slide the eggs in. Poach 3 minutes for a runny yolk.

  5. 05

    Spread the smashed avocado thickly over the toast.

  6. 06

    Lift out the poached eggs with a slotted spoon, drain briefly, and set on top.

  7. 07

    Finish with olive oil, chili flakes, and a final crack of pepper.
