Miso-glazed salmon with soba noodles

Sweet-savoury miso glaze lacquered over salmon, with cold soba and quick-pickled vegetables.

Miso-glazed salmon with soba noodles

Ingredients

  • 2 salmon fillets
  • 2 tbsp white miso paste
  • 1 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 150 g soba noodles
  • 1 carrot, julienned
  • 1/2 cucumber, julienned
  • 2 spring onions, sliced
  • 1 tsp sesame oil
  • Sesame seeds, to serve

Method

  1. 01

    Whisk the miso, mirin, soy sauce and brown sugar into a smooth glaze.

    Coat the salmon in half the glaze and marinate 10 minutes.

    Preheat the grill or a hot pan. Cook the salmon 3-4 minutes per side, brushing with the remaining glaze, until caramelised and cooked through.

    Meanwhile, cook the soba noodles according to the packet, then rinse under cold water and toss with sesame oil.

    Quick-pickle the carrot and cucumber with a splash of rice vinegar while the salmon cooks, if you have a few extra minutes.

    Divide the noodles between bowls, top with the salmon, pickled vegetables and spring onions.

  7. 07

    Finish with a scattering of sesame seeds.
