Brown butter chocolate chunk cookies

Ingredients

  • 225 g unsalted butter
  • 200 g light brown sugar
  • 100 g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 340 g plain flour
  • 1 tsp baking soda
  • 1/2 tsp salt, plus flaky salt to finish
  • 250 g dark chocolate, roughly chopped

Method

  1. 01

Melt the butter in a pan over medium heat, swirling often, until it turns golden brown and smells nutty, about 5 minutes. Pour into a bowl and cool slightly.

  2. 02

Whisk the browned butter with both sugars until glossy.

  3. 03

Whisk in the eggs and vanilla until thick and pale.

  4. 04

Fold in the flour, baking soda and salt until just combined, then fold in the chocolate.

  5. 05

Chill the dough for at least 20 minutes.

  6. 06

Preheat the oven to 190C. Scoop the dough into balls and space well apart on lined trays.

  7. 07

Bake 11-13 minutes until the edges are set but the centres still look soft.

  8. 08

Sprinkle with flaky salt while warm and cool on the tray for 5 minutes before moving.
