Seared salmon with charred greens

Crisp-skinned salmon over blistered greens with a sharp little salsa to cut the richness.

Seared salmon with charred greens

Ingredients

  • 2 salmon fillets, skin on
  • 200 g tenderstem broccoli or seasonal greens
  • 1 tbsp olive oil, plus more for the greens
  • 1 small red chili, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tbsp capers
  • Zest and juice of 1/2 lemon
  • Salt and black pepper

Method

  1. 01

    Pat the salmon skin dry and season both sides well.

  2. 02

    Heat a dry pan over medium-high heat. Add the salmon skin-side down and press gently for the first 30 seconds.

  3. 03

    Cook 4-5 minutes until the skin is crisp, then flip and cook 2 minutes more. Remove and rest.

    In the same pan, char the greens in a little oil over high heat for 3-4 minutes until blistered.

  5. 05

    Add the chili, garlic and capers and toss for a minute.

  6. 06

    Finish with lemon zest and juice, then plate the greens with the salmon on top.
