Grilled squid with lemon and herbs

Charred fast over high heat, then dressed simply with lemon, chilli and a fistful of herbs.

Grilled squid with lemon and herbs

Ingredients

  • 600 g cleaned squid, tubes and tentacles
  • 3 tbsp olive oil, plus more to finish
  • 2 cloves garlic, finely chopped
  • 1 red chili, finely chopped
  • Zest and juice of 1 lemon
  • Handful of parsley, chopped
  • Salt and black pepper

Method

  1. 01

    Score the squid tubes in a shallow crosshatch pattern and pat dry.

    Toss the squid with 1 tbsp olive oil, salt and pepper.

  3. 03

    Heat a griddle or pan until very hot. Sear the squid in batches for 1-2 minutes per side until charred and just opaque.

    Whisk the remaining olive oil with garlic, chili, lemon zest and juice.

  5. 05

    Toss the hot squid with the dressing and parsley.

  6. 06

    Serve immediately, with extra lemon on the side.
