Ingredients

  • 200 ml fresh lemon juice, about 6-8 lemons
  • 150 g caster sugar
  • 150 ml water
  • 1 L sparkling water, chilled
  • Ice, to serve
  • Lemon slices and mint, to garnish

Method

  1. 01

    Warm the water and sugar in a small pan, stirring until the sugar dissolves, then cool to make a simple syrup.

  2. 02

    Combine the lemon juice and cooled syrup in a jug.

  3. 03

    Fill glasses with ice and pour over the lemon mixture, filling each glass about a third full.

  4. 04

    Top up with chilled sparkling water and stir gently.

  5. 05

    Garnish with lemon slices and mint before serving.
